Harambee Solutions Exchange 2019

This is what has been keeping us busy in October! 400 people converged on The Forum Campus for the Harambee Solutions Exchange 2019. The exchange included talks on how to successfully supporting young people into work, tourism, agriculture and the green economy and township economy and enterprise. #employsayouth

On the menu:

- Summer rice paper wraps with cucumber and carrot hummus

- Over dried pumpkin fatboys with green pesto

- Lentil bobotie samosas with sweet chilli chutney

- Karoo lamb skewers with green olive tapenade

- Mini savoury profiteroles filled with spicy chicken liver parfait

- Baked popcorn chicken bites with herbed whole grain mustard sauce and honey drizzle

- Cauliflower pizza topped with smoked chicken salad

- Steamed ginger line fish wontons with light chilli soya

- Mini lamb pitas with harissa spiked cucumber ribbons and grilled tomato

- Dark chocolate tart with toasted sesame parfait

And for the evening menu:

- Balsamic glazed baby beets with pumpkin seed brittle and onion ash [VF]

- Parmesan garlic and polenta crumbed potato with homemade sundried tomato compote

- Panko crumbed lamb belly and baby cabbage and mint puree

- Duck liver mousse, fig preserve, lemon gel and rocket on brioche disc

- Grilled monk fish and dill koftas with lemon coconut aioli

- Cranberry coated seared blesbok loin on toasted focaccia with charred pineapple

- Soy braised flank of beef with chow main egg noodles and bean sprout salad
